Start with a simple pamphlet stitch. You need almost nothing: paper, a needle, waxed thread, a bone folder, and a piece of cardstock for the cover. Make five of those. Then try a Coptic stitch binding. By the time you can do that well you will understand the craft well enough to know what to learn next.
