Canning vegetables at the end of summer

Pressure canning versus water bath canning is not interchangeable: low acid vegetables require a pressure canner for safety. I water bath can tomatoes, jams, and pickles. I pressure can green beans, corn, and chicken stock. The investment in equipment is front loaded but jars last indefinitely.
