Cooking a whole animal: what I learned from a pig roast

Did a whole pig roast for 30 people with a rented La Caja China box. Preparation was a two day process. The result was remarkable and fed everyone generously. The most interesting part was understanding the whole animal and using parts most people never encounter. A humbling and educational cooking experience.
