Cooking for one without waste or boredom

Batch cook proteins Sunday. Keep a variety of sauces and grains. Learn to scale recipes down. Accept that some things do not scale well and eat them over two days. A half onion in the fridge lasts a week and is not waste. Cook things you are genuinely excited to eat not things you think you should eat.
