The technique of slicing the tuber then tilting the slices and cutting it again from the same direction to julienne is new to me and I will definitely try it out in the future.

childish_penguino33 Mar 28, 2026 +83
Worked in Asian restaurants for 15 years. This is how most of the kitchen staff I've seen juliennes veggies.

I’m always hyped to find new efficient ways to cut ingredients

I was hoping he'd do an onion--I could use some secret knowledge for those.

I feel like you need a razor sharp knife or else everything will slip. Maybe there's a special angle bias in the original slices that can mitigate this.

A dull knife is a dangerous knife
29
Tsuhume Mar 29, 2026 -21
Only if you are cutting fast. If you are taking your time and cutting safely, then a dull knife will be safer.
-21
CPTherptyderp Mar 28, 2026 +2
You always need a sharp knife for anything that goes without saying
2
Smyley Mar 28, 2026 +2
One of my chefs taught me this technique with a bread knife. Sharp is good, and bread knives stay sharp, lol. I learned a lot of knife skills doing things his way
2
magicwings Mar 28, 2026 +6
Makes me want to buy some much sharper knives!
6
ChickenDelight Mar 28, 2026 +14
Unless your knives are totally shot, you can get them very very sharp with a c**** whetstone and not much effort. It's not hard and I'm sure listnook has guides for beginners somewhere. And you really should learn how to sharpen and care for knives before you buy nice ones anyway.
14
catsumoto Mar 28, 2026 +16
r/sharpening Good luck with that rabbit hole. If you’re not careful you’ll end up with 16 different stones and eternal judgement of the state of their knives when visiting relatives
16
CPTherptyderp Mar 28, 2026 +3
My mother in law won't let me sharpen her knives because she thinks "I'll cut myself" (herself). Well Eileen you shmure as shit aren't cutting that tomato so what are you going to do. I ended up just buying a knife set to keep there since I end up cooking when we visit anyway

You don't need to buy sharper knives. You can just sharpen your knives. If you don't know how, look up online and someone locally does it for fairly c****.
3
heftybagman Mar 28, 2026 +2
Huge for carrots. You can go about twice as fast as if you cut planks western style.

Such an under-appreciated art. When I was in film school, the sound effects were one of my favorite parts of filmmaking. Who knew that something as mundane as a door closing is something you would edit in afterward?

I love this movie. Ang Lee has had such a varied career. This movie, Lust, Caution; Sense and Sensibility; Crouching Tiger, Hidden Dragon; Hulk; Brokeback Mountain?! Crazy.

emotional_pizza Mar 28, 2026 +76
Truly an S tier director for sure. Up there with Rob Reiner in terms of "master of all trades" directors. People give so many flowers to Nolan and Tarantino and Scorsese, but sleep on Lee!

Say what you will, but that laid the foundation for the onslaught of superhero movies (whether that's a good or bad thing can be debated). It may not have been good, and I was maybe about 13 or so when I watched it, but I still think about some of the scenes from that movie to this day
15
veryverythrowaway Mar 28, 2026 +12
It was a $200 million art flick that they sold as an action tentpole. Personally, I think the film has a ton of good things going for it, as flawed as it might be. I appreciate the unique approach to a comic movie. Hulk may not have been loved, but it had quite a set of balls.
12
roastbeeftacohat Mar 28, 2026 +1
it didn't triple it's budget, and it was 15th highest grossing that year. only way I see it setting the stage for Iron man, is that marvel couldn't get studio support for the project and produced it themselves.

There was a remake of this movie but for Mexican food and Mexican-American family called Tortilla soup [https://youtu.be/PrefHMZ3iWk?si=L1ye5S462toUatdH](https://youtu.be/PrefHMZ3iWk?si=L1ye5S462toUatdH)

He was so aggressive with that fish.
58
f_ing_ponderous Mar 28, 2026 +67
Part of the plot. Theres a scene later on where the master chef attempts the same task but is more hesitant bc of his "mid/late life crisis". It shows that he's not so much physically but mentally affected by the new distractions in his life. Really great story telling.

Choppergold Mar 28, 2026 +16
Chopsticks killed it
16
Spidey209 Mar 29, 2026 +1
That annoyed me. No need to scale it if you are going to skin it.

It was already dead in the water if that helps.
1
code-254 Mar 29, 2026 +1
Killing the fish doesn't really bother me. It's just a bit amusing how aggressively he did everything from grabbing, killing, scaling, etc. It's like he has a grudge against it or against fish in general.

That's a bit of a plot point of the movie.

I suspect the order is wrong here. Chicken should have been killed and cleaned first, then the fish gets cleaned and gutted.
3

I took it as this is throughout the shift he is cooking and doing all these different techniques. It’s not one meal. Then again never saw this movie

My daughter and I watched this years ago. We both got hungry for Chinese food. So, that’s what we had for dinner. Food from Kwang Chow on King Rd in Portland Oregon, it was always our go to for Chinese food!

Is THIS (and Tampopo) the reason for anime's obsession with cooking and plating scenes?

Japan has always been big on food presentation and preparation, going back hundreds of years; food p*** is just universal.

Such a wonderful movie. Love great cooking scenes in film and this movie is full of them. And on top of that the storytelling is incredible. This type of film is where Ang Lee shines.
1
lilmookie Mar 28, 2026 +1
The opening to this movie is fire. I really wish they would make an Eat Drink cut without the Man Woman part.

I remember getting this movie as a recommendation from the sous chef when I was working foh over 20 years ago. He said this scene alone made the movie worth watching. I enjoyed both.

Can anybody explain why he has a ponds worth of living frogs just chilling on the counter. Like I understand cooking frogs legs and such but they're just on the counter, moving about , with no container or anything

AlbertTheHorse Mar 29, 2026 +1
When this movie came out, it was epic.  It really was quite a sensation. I just rewatched it on Tubi yesterday. I must commend Gua Aleh’s performance as Madam Liang. She _owned_ that dinner table scene. The switch flip just sends her off. I suggest rewinding and watching it at least once more to see her nuance.  As a kid, I stayed in Madam Chiang Kai-Shek’s Grand Hotel. It was so memorable, beautiful and I remember the luxury even many decades later.

How come they are so thin and slim when they use so much oil for frying everything
-10
desacralize Mar 28, 2026 +11
It doesn't matter what you eat if you're not eating too much of it (when it comes to gaining weight, anyway, obviously it matters to satisfaction and health).
11
Dan_Dan2025 Mar 28, 2026 -14
Yeah dude no shit. But they deep fry almost everything every day so wtf
-14
Chief_Cthulhu Mar 28, 2026 +9
Chinese cuisine is mostly stir-fry, which only uses a little oil. Idk where you're getting 'deep-fry everything' from. If someone eats fried-food every day with no exercise, of course they'll be fat.
9
Dan_Dan2025 Mar 28, 2026 -13
Have you seen stir-fry here? No so what are you on about?
-13
Chief_Cthulhu Mar 28, 2026 +7
The only frying is this scene is the fish and he flashed-fried the braised pork for crispy skin, what are you going on about?
7
Dan_Dan2025 Mar 28, 2026 -10
Bro you are weird
-10
Chief_Cthulhu Mar 28, 2026 +10
You thought "they use so much oil for frying everything" because you saw two dishes touch oil in a 4 min scene.
10
durz47 Mar 28, 2026 +3
You obviously hasn’t eaten Chinese homecooked meals. We stir fry with only enough oil to prevent sticking. There are also lot of steamed dishes, stews and soups.
3
doesnthavearedditacc Mar 28, 2026 +3
do you see him deep fry everything every day here? no so what are you talking about?

Cut rice and more tea. That's what people at least  do here in  in this part of Asia at least. If we want to cut on weight gain we limit rice intake. Then suppliment with tea which is an appetite suppressant.
3
coleman57 Mar 28, 2026 +1
Deep-frying doesn't bring nearly as much oil to the plate as you might think, and oil doesn't bring nearly as much fat to the body as you'd expect. The main culprits in the worldwide obesity crisis are excess simple starches and sugars in foods processed to create craving that drives people to consistently overeat, plus lives designed around lethargy.
1
emailforgot Mar 29, 2026 +1
> simple starches ah, like rice.
1
coleman57 Mar 29, 2026 +1
Yes, you could definitely get fat by eating too much rice and not walking around enough. But most East Asians don’t eat more rice than they burn off walking, so they don’t get as fat as people who eat processed food designed to make you eat too much, and then sit all day and evening.
1
roedtogsvart Mar 28, 2026 +6
they walk a lot, the food is fresh, very little sugar, nothing is baked into fat slop with pasta and cheese, etc
6
roastbeeftacohat Mar 28, 2026 +1
because they're only eating a few bites per person, and then a whole ton of rice. this is also supposed to be elaborate cooking, and not an everyday meal. japanese cooking is similar. high grade wagyu is almost too fatty to eat like a westerner, because the cows were bred and razed to be eaten two bites per meal. the beef isn't actually that expensive once you realize how small one portion is supposed to be. add in that nobody drives and you don't really have to count calories. In Europe this is sometimes called the french paradox. "how are the french so skinny with a rich french diet?" they don't eat lapin royal every day, and they walk everywhere. get outside of the cities where you have to drive and people are noticeably fatter.
