Fermentation is the most interesting thing I've gotten into

Started with sauerkraut. Then kimchi. Then kombucha. Now I have a dedicated fermentation shelf with 11 different projects going. Miso is currently at month four. The science of it is fascinating and the connection to food preservation traditions from around the world is something I did not expect to care about.
