The difference was they were allowing inspectors in, whereas post-Trump tearing up JCPOA they no longer had to allow inspectors. Which then removed the ability to monitor what they were actually doing, and instead rely on Thoughts, Prayers, and Feelings.

I think you may have misunderstood the original agreement and why they are not made super long term.
Basically agreements like this are done for about 2 decades at a time and the key part in it is that independent inspectors can go into Iran to audit what they are doing (this has proven to be very useful to keep these states from building nukes)
The reason they are time limited is that if the situation changes, e.g., there is some new weapon that is invented, or Iran as a country is going through some new kind of problem then the next agreement would take these things into account and allows the west to put specific strategies and pressures into place.
The goal is always to perpetually delay these states building their own Nuclear armaments, but a static set of agreements mean very little when political and technological context changes.
If western powers wanted to make more long term deals they would sign security pacts that guarantee that the US and other major powers would go to war to defend states like Iran in a war (ie, they don't need nukes because they will be protected)... But no one wants to do that because the middle east is a mess and the chances of conflicts breaking out is too high.
For a comparison countries like Australia, NZ and most of Europe are not pursuing nuclear weapons and are protected by pacts with the US and the EU.

Would you walk us through the security pacts guaranteeing Australia's defence by the US and EU? So far as I am aware, the US and the EU do not have any mutual defence treaties guaranteeing Australia.
There's ANZUS, which obligates the US to meet with us if we get attacked. There's a handful of multilateral intelligence sharing and cooperation treaties. No security pacts I thought. What am I missing?

You are technically right that there is nothing (as far as I know) that specifically says that UK, US or anyone must enter a war on our behalf, but really what we have effectively is partnerships with EVERYONE except China, Russia, North Korea (of those that could threaten us)... And if they attacked us, it would be in the US, EU, UK and Japan's economic interest to support us.
While we don't have pacts like the EU, NATO, what we have is about the next best thing, given that Australia also does not want to be dragged into random wars.

Which is frankly better than just a pact on paper. There is no real international law, only interests.
Which is why many alliances are trade first, then include defense as well. The EU itself, for instance, is primarily economic, with defense bolted on top - the defense portions can be relied upon because of the economic ties. It's in everyone's interest to fulfill their obligations.

Highly doubt it. First, it is not clear who is in control in Iran. Couple of US friendly figureheads have shown up, but who actually have control of the missiles, and how much control they have is not clear. All of the major players are in hiding.
Second, it is in Israel's best interest to keep this conflict going, because any money the US is spending is money Israel is not spending. Israel has already announced plans to continue the targeting of Iranian leadership, So US have given Israel a "resume hostilities" button they can press anytime they want.
Third, and more importantly, there is a significant part of the US leadership that think this is fulfilling end time prophecy. Very well funded people have been waiting their entire lives for this. There need to be bloodbath, hell on earth, in order for God to come down and save his chosen people. They don't know how much blood needs to be shed, it has to be a lot. So they have put their faith in god's chosen leader, and he is going to do things b**** ass liberals refuse to do, and actually do what the prophecy demands.
So no, this is not ending anytime soon.
Edit: Sure enough, right on time, the head of intelligence for Iran was just murdered. Israel wants to the US to spend as much of money as possible fighting their wars. The ceasefire between USA and Iran most likely won't end unless Iran agrees to at least most of Trump's demands, AKA negotiations.
Even if it did, Israel would most likely still continue fighting if Iran doesn't agree with Trump's 15 points deal. Israel has been fighting IRGC proxies for more than 3 decades and wants an end to this regime once and for all. Israel doesn't care about the Arabic countries being targeted by Iran, and defeating the IRGC is much more important to them than oil and LNG prices.
