Learning to make proper sourdough bread from scratch

Week one: sad flat disk. Week three: slightly less sad disk. Week six: actual bread with decent crumb and a crust that crackles. The starter is now seven months old and named Gerald. The learning curve is steep but the result is genuinely better than anything I can buy within ten miles of my house.
