Smoking meat for beginners — my first year of mistakes

Mistake one: opening the lid too often. Mistake two: not maintaining consistent temperature. Mistake three: wrapping too early. Mistake four: not letting it rest long enough. A properly smoked brisket after a year of practice is something genuinely transcendent. The learning process is delicious even when it fails.
