Spice blending: making your own from scratch

Commercial spice blends are often old, adulterated, or heavily padded with fillers. Making your own from whole spices that you toast and grind takes ten minutes and the difference in flavor is dramatic. Garam masala, berbere, za'atar, and ras el hanout are great starting points with clear culinary payoff.
