Grew up in Chicago, lived in or around the city for 33 years. I agree with everyone here- tavern style was what you’d get on Friday night. Tavern style was what was ordered at the sleep over as a kid. Tavern style was what mom got when she worked late and didn’t feel like cooking, or what you’d get when everyone came over to watch the game. Do I love deep dish? Yes. Truly, there is nothing like a butter crust deep dish pizza. And yes, I’d still call it “pizza”. But it’s like a burger vs a steak. And I don’t mean that one is better than the other, they’re just very different versions of something that is actually pretty similar. Deep dish is special occasions, it’s a super filling meal you go out and enjoy with your family. Tavern style and even New York style is what you’re ordering for a casual bite. I have no hate for either. I will definitely say I prefer NY Style over Tavern style. Deep dish is like its own category. Not better or worse, just different.

Yea, tavern style is a very thin almost c****** like crust. It’s good. I do prefer NY style to tavern style but it’s still great pizza when done right. Tavern style is wha most people eat in Chicago. As said previously, deep dish is more a novelty.

It’s closer to Jersey bar pie style. Though they cut in squares and Jersey cuts in slices. Beyond thin crust, crispy to the point it’s almost a c******.

I’ve read nothing but facts. I don’t live too far from the border of Illinois so when I do drop over to Chicago I will get a fresh slice of deep dish and a frozen one to bring home. A quick slice of pizza should be NY style. A meal, and I say that in the best way, is Chicago style.

Idk man, I always found it pretty dry. There were some local greasy spoons by my first Chicago apt that I’d get it from sometimes. You know, the kinds of places that sell tacos, pizza, and fried chicken (or maybe Indian food, rib tips and pizza puffs…). But I just would buy it because it was c**** and I was a broke law school student. Even the nice thin crust joints my friends would take me. I always preferred deep dish or stuffed pizza over thin crust/“tavern style”.

Exactly. I only really eat it when family comes to town. And lately, I've been doing Detroit style more and more. It reminds me of the classic pizza hut pan pizza I grew up with.

I feel Ike Jets is the most slept on pizza out there. Few pizzas as good to me as an 8 corner with pepperoni and sausage! And shoutout to Roberts Pizza in Chicago, my wife and I really enjoyed it when we visited.

Pizza ajit just doesn't cook their pan pizzas right anymore. They don't come out fried on the bottom. My only complaint about Detroit Style is that I'm usually stuffed after one slice, especially if it's more like Jet's then Buddy's

I went to Chicago once, and I absolutely had to have a true Chicago-style deep dish. It was like a cake of pizza, or maybe a lasagna? It was a real beast to perceive. I really need to try Tavern Style!

Any food gatekeeping is tiresome. As a Chicagoan for almost 30 years, I get really tired of the concept of condiment gatekeeping as a point of pride. Disliking ketchup on hotdogs is not a personality trait. Certainly not one you need to advertise. Also, the irony that some of the replies are people doing pizza gatekeeping is telling.

Went down a pizza rabbit hole during COVID and came out with a genuine appreciation for how many distinct styles there are worth enjoying. Read somewhere that part of what makes NYC pizza unique is actually the city’s water treatment, something in it supposedly affects the dough in ways you can’t replicate elsewhere. Can’t personally verify if that’s true, but it’s the kind of detail that made me personally appreciate how much can go into separating one style from another.

New Haven is a better style for the bigger pies anyways. NYC is just a style like any others, had crappy versions and good versions. It's definitely not the platonic ideal of a pizza, and the best pizzas I had weren't that style.

I dunno. I went to the PEZ visitors center with my girl a few months ago (which was fun!) and I figured while I was down there to get some New Haven pizza. We went to Frank Pepe's Apizza. Got a pizza, and it was good. No doubt about that...but I've certainly had better. I was nice and crispy and reminded me of New York pizza, but it was a bit bland. The toppings were great and fresh. I do want to try it again with some pepperoni (gf doesn't like pepperoni) just to say I tried it at least twice. NY pizza is good. I don't think I've had a bad slice there ever. Chicago deep dish is good, too. My only complaint is that when I went to the restaurant, I ordered it and it was an automatic 45 minute wait. That's... a long time. It wasn't bad by any means and I'd get it again, but the wait time was bad.

Like any other convenience store. Weird take, because bodegas sell stuff you can't get in any other convenience store. And often have a bodega cat. Which is against code. But also standard. In a NYC bodega you can buy stupid fake virility pills, synthetic marijuana, blunt wraps and other marijuana paraphernalia, legitimate cigarettes stamped from another state, and so on. Some sell liquor even though they don't have a license because no one can sell hard liquor in NYS but liquor stores. You know, *just like a corporate 7-Eleven*.

Deep dish is still good. You eat it less than once a month in chicago. The rest of the time it’s tavern style or something similar. But i still love going to Lou’s every so often for a deep dish.

I knew Detroit style would come up (I grew up in the area.). It’s my favorite but haven’t found any place outside of the region that quite lives up to places like Buddy’s or Shield’s. The others either put too much cheese, grease or Pepperoni for some reason.

It’s a brilliant bit, and I say this as a food writer who was born and raised in Chicago. I grew up on deep dish. I love deep dish. If you can’t find the humor in this, I can’t help you. What’s *sad* is how many Chicagoans are so sensitive about deep dish that they’ve spent the past 20 years retconning this whole “deep dish is tourist pizza” BS. And I could never prove it, but I have a strong suspicion that this segment played no small part in that bit of revisionist history.

How does it seem like a casserole? It factually meets the definition of pizza in form, ingredients, and taste. It's made of pizza crust with a crusted bottom, with layers of cheese and tomato sauce. It does **not** meet a definition of casserole, because it's not baked, or shaped, in a casserole bowl.

A deep dish pizza slice is a solid chunk and crust on the bottom and the back, like any other slice of pizza. Keyword solid as the slice isn’t going to start falling apart when you pick it up, you just eat it like any other slice of pizza, it’s just way thicker.

What does off mean? A pizza is not defined narrowly by the ordering of layers. You also do not need to eat with a fork. This is a myth bordering on a lie. I eat deep dish with my hands whenever I have it. I've also seen people eating big NYC pizza with a fork too.

Nuh uh. I get that language is how it is used and you're trying to redefine pizza to include tomato soup in a bread bowl, but I ain't going along with it. Your casserole may be pizza inspired, but it's significantly different. A hamburger without the top bun isn't a pizza just because it's got bread, ketchup, cheese, and some meat, and neither is your cheese lined swimming pool. (I'm being tongue-in-cheek, it does seem like a different type of food to me, but I don't really care and am just playing along.)

It can't be soup because there is no broth. Calling it a bread bowl is saying any pizza with a **cornicione** crust is a bread bowl, which is most of them. The depth of the crust has never a determiner. Adding tomato sauce on top of the pizza is a style used by other types of pizzas.

A bowl is a bowl by virtue of the walls supporting the contents to a non trivial depth, not merely by being raised. Many plates have raised edges. The tomato soup in your bread bowl is kept from spilling out by the walls of the bowl, hence it is a bowl of soup. If y'all accidentally left the broth out, that's y'all's problem.

Was in Chicago a decade ago and went to Giordinno’s (sp?). Enjoyed it, particularly the gluten free pizza. They simply made the crust out of sausage. Heart attack on a plate, but a tasty one.

I was told the very first time I was in Chicago by a cab driver that locals don't really eat deep dish and eat the thin crust tavern-style far more regularly. This isn't a new revelation - you only need to do the slightest amount of research and ask literally one person from Chicago to know this. We New Yorkers can respect the tavern-style, but deep dish? Nah, that's not pizza.

We’ve ordered deep dish from 3 different places in Chicago, and honestly they were pretty much all good. Granted they all get shipped over night to Oregon, but still… If I had to pick one, it’d be Giodarno’s. Their instructions, added sauce packet, made the deep dish fool proof.

Fwiw, if you’ve never had that pizza before, don’t try and thin slice it. Iirc, I think by our second pizza, we just did quarters to keep it all together so to speak lol And with that, I’ll leave you with a quote from my gf…honey do you want another slice? As she’s unbuttoning her pants she says, another slice, are you kidding me? lol (You could always start by sharing a quarter, then get a second quarter if needed. Quarters stored more easily too.)

My two cents on the best slice in NY is at a place in Brooklyn appropriately called Best Pizza, it’s Frank Pinello’s spot. I judge just by the cheese slice but they have an ingredible white pizza and vegetable slice and just every option they have is incredible.  I don’t think that’s the most popular answer though, more likely to be something like DiFara or John’s on Bleeker or even Joe’s on Carmine for like a quintessential NY slice. L’Industrie and Angelo’s Coal Oven are up there as well. Not a huge fan of Lucali.  Chicago - it’s simply Lou Malnati’s. It’s the most balanced. It’s the one you have to get if you only have one option. I’m a personal fan of Pequod’s but would still consider Lou’s the #1 generally speaking.  Sally’s in New Haven (and evidently opening a ton of locations in the coming years) is my favorite pizza place. Their standard pies are the best and their rosemary potato and onion pizza is the best bar food.
