I used to watch Inuyasha on the graveyard shift at the bar I worked at, thought it looked stupid, now own several seasons on DVD.

Invincible. I didn't watch it with high expectations, but it hooked me. Omega Man is one of the most interesting characters I've run into on a TV show.

Started Fullmetal Alchemist Brotherhood as background noise while doing something else. Ended up dropping everything I was doing by episode 3. Nothing prepares you for how well it balances humor, tragedy and a genuinely tight plot with zero filler.
