Fine here's my take for your market research: HBO because they have 25+ years of great originals and an actual catalog of other shows/films. Apple is great, but HBO has wayyyy more content.

While Apple TV has incredible originals, it has the problem where there’s barely anything that isn’t an original so I’d probably go with HBO Max

It’s the best service to binge stuff, then cancel for a few months. I do it with hbo too but Apple dries up the fastest.

I will settle for nothing less than both of them, at different times, because I subscribe and unsubscribe when I'm done watching.
Apple TV has better brand new originals, but there aren't enough of them to justify an annual subscription. Once you've burned through Slow Horses, Severance, etc, it's all stuff you have to rent or buy.
New shows on HBO Max are less interesting, but the Warner catalog they carry has genuine film classics.
So, it's different.

People are so scared to be marketed or researched against their will that is impossible to just ask stuff, or make a post that you liked something.
To answer your question, Apple TV for me. Their sci-fi is too good.

AppleTV is better, but only has a handful of shows running a year.
HBO Max has more originals but likewise, most of them don't run often. It has the added bonus of HBO shows as well as other shows I might want to rewatch, and eventually new WB movies stream there.
ATV for interest, HBO Max for how much I'd actually use it.
